Who would have ever thought you could turn a vegetable like beetroot into a beautiful and colorful dessert, right?
Beetroot Barfi is a milk based Indian sweet made with beetroot and is absolutely tasty. If not for the color, you wouldn't even know the sweet contains beetroot.
I got this recipe idea from a fellow food blogger. I was instantly attracted to the bright pink color of the sweet and decided to give it a try! Needless to say, this sweet is a quick and healthy version of the regular Indian versions of sweets. And with the many Indian festivals on-going and coming up, you should definitely give this a try!
Ingredients:
Boiled beetroot- 2 cups, grated
Milk solids (Paneer/ Mawa/ Khoya)- 1 cup, grated
Condensed milk- 1 cup
Nuts for garnish
Clarified butter or ghee- 1 tsp

How to make Beetroot Barfi:
1. Grate the boiled beetroot finely using a grater
2. Do the same with milk solids. Grate it finely.

4. Add in the beet and cook it until the raw flavor goes away
5. Add in milk solids and mix well.

7. Pour this mixture into moulds or a dish, garnish it with nuts and allow to set in refrigerator for 2 hours.
8. Serve chilled.
