Spanish rice is a quick and easy recipe you can make in minutes. If you are a lover of rice, you will definitely adore this recipe. I love rice and I have always looked for ways to turn my regular rice into something different. Here's one such recipe. Hope you love it as much as I do.
Tomato- 1
Onion- 1
Stock/ water- 2.5 cups
Tomato ketchup- 2 tbs
Cumin powder- 1 tsp
Garlic- 1, chopped
Rice- 2 cups
Olive oil- 2 tbs
Jalapeño/ Green chilli- 1, chopped
Lime- 1 tbs
Cilantro/ coriander- handfull, chopped
Seasoning
Salt
How to make Spanish Tomato Rice
1. Roughly chop onion and tomato and blend them together.
2. In a pot, mix together onion-tomato paste and stock/water.
3. Add cumin powder, garlic, salt and tomato ketchup. Mix well and allow it to boil
4. Meanwhile, in another pan add rice.
5. Fry the rice with olive oil until it has a golden brown. This is the most crucial step for the flavor.
6. Add in jalapeño and garlic and continue stirring for a minute until you get a nice flavor. Turn off the flame.
7. Add the fried rice into the boiling onion-tomato sauce. Cook on high flame
8. When the water dries up turn off the flame.
9. Cover the lid for 15 mins for the flavors to absorb.
10. Squeeze in some lime juice on top and add chopped cilantro.
11. Serve with some beans and guacamole
