Do you often have left over rice from your dinner last night and don't know what to do? Well, here's what you can do- Spinach rice. A one pot recipe as easy as it sounds, serve it by itself or with some fresh yoghurt!

Spinach (Palak) rice is a healthy one pot meal that you can prepare with left-over rice. A recipe so healthy, I'm sure theres nothing stopping you there!
Ingredients
Left over rice or cool fresh rice- 2 cups
Cleaned and washed spinach- 1 cup
Onion- 1, chopped
Ginger-garlic paste- 1 tbs
Mixed vegetables (corn, peas, carrots, potatoes)
Mint leaves (optional)- 3-4
Lime juice- 1 tsp
Whole spices
Star anise- 1
Bay leaf-1
Cardamom- 2
Cinnamon- 1/2 inch
Cumin seeds- 1 tsp
Cloves- 3-4
Spice powder
Turmeric- 1 tsp
Garam masala- 1 tsp
For Seasoning
Salt
How to make Spinach Rice
1. Puree the raw spinach and keep it aside.
2. In a pot, add oil and allow it to heat.
3. Add in all the whole spices and flash fry for 30 seconds.
4. Add in the onions and cooke for a minute.
5. Add in ginger-garlic paste. Mix well.
6. Add in the vegetables. Cook until the vegetables are almost done.
7. Add in turmeric and garam masala. Mix well.
8. Now add in the spinach puree and cook until the raw smell from the spinach disappears
9. Throw in some mint leaves.
10. Add the cooked rice and mix everything well.
11. Squeeze in lime juice and adjust seasoning with the salt.
12. Serve hot with some fresh yoghurt or salad.
