Ingredients
Oil- 4tsp
Mix veggies- carrots, beans, corn, peas (you can use any of your choice)
Egg noodles- 1 packet
Garlic- 2-3 cloves, chopped
Egg-2
Green chilies- 2-3, slit
Cilantro– handful
Seasoning
Salt
Pepper
Sauces
Vinegar- ½ tsp
Soy sauce- 1 tsp
Chili sauce- ½ tsp
Sichuan sauce (shezwan sauce)- 1 tsp
How to make Egg Hakka noodles
Note: Make sure to use high flame throughout. It will enhance the flavor. Avoid burning.
- Boil noodles al-dente with some oil. Drain the water and keep it aside.
- In a wok add oil and let it heat.
- Add beaten eggs and scramble it. Keep it aside
- In the same wok, add some more oil, green chili and garlic.
- Add veggies and cilantro and sauté for a minute.
- Now add the scrambled eggs back to the wok.
- Add salt and mix well.
- Add in the noodles and mix well slowly and carefully avoiding the noodles from breaking.
- Keep mixing till all the veggies have mixed with the noodles.
- Add in all the sauces mentioned and again, mix well.
- Adjust the seasoning accordingly (sauces also contain some salt)
